As the holidays approach, many start thinking about food. All of a sudden, special dishes are everywhere and newspapers are filled with recipe ideas. What often gets overlooked is that the Thanksgiving meal is a harvest celebration something that is celebrated in countries around the world. While turkey and stuffing are center stage, there are many delicious fruits and vegetables at their peak right now. Most are familiar with the benefits of eating a plantbased diet, and many of us have been told by a doctor that we need to add more produce to our meals. Well, we are in luck right now! Sweet potatoes, leafy greens, pears, rutabagas, cruciferous vegetables* like brussels sprouts, are all in season right now. Because they are so flavorful, minimal preparation is needed to cook them. Sweet potatoes, russet potatoes, and squash can be easily roasted or baked in bulk and then put in the fridge to eat throughout the week. I like to bake my sweet potatoes with some Indian spices sprinkled on them to add depth to the flavor and balance to the sweetness. With regular potatoes, I usually add lots of rosemary and some garlic. (Did you know that herbs and spices are loaded with incredible nutrients?)
